Cheesecake


The April 2009 challenge is hosted by Jenny from Jenny Bakes. She has chosen Abbey's Infamous Cheesecake as the challenge.

I looove cheesecake. And I love how easy it is to make, yet how impressed people are when you serve it. I think people have the mistaken impression that cheesecake is hard to make, or maybe too expensive or maybe too time consuming to make at home. I find it to be a dessert that is a crowd pleaser and great for dinner parties since it can (should) be made in advance.

This time I decided to try a version that I've had recently at one of our high end restaurants. I made the DB recipe using a plain vanilla flavouring and no graham cracker base. After refrigerating overnight, I sliced individual pieces and wrapped each in butter coated layers of phyllo. Baked in the oven for 10 minutes at 350 degrees, the cheesecake came out warm and gooey with a crisp phyllo coating. I finished it off with a simple mango coulis. Absolutely decadent!! I can't recommend this twist on the standard cheesecake enough.

What a great idea! You absolutely have extra points for creativity.. I never liked the dense cheesecake taste eventhough i'm a cheese addict. But when it's gooey and creamy, especially wrapped in crunchy filo pastry, I just won't be able to resist it. I might try this method sometime. Thanks for sharing

Awesome idea. This reminds me that I need to use phyllo more. That stuff can be intimidating.
